IDLI – DOSA BATTER

Ingredients –

Rice – 3 Cup , Urad dal – 1 Cup , Fenugreek seeds – Half tea spoon , Eating soda – 1\4  Teaspoon , Salt – As per taste .

Recipe –

Clean rice and urad dal separately . Wash it for 2-3 times . Soak rice and urad dal separately . Add fenugreek seeds to soak with urad dal . Keep it for soaking for 5-6 hours or whole night . After that excess extra water from rice and urad dal . Keep this water in other bowl , use this water for grinding . First grind urad dal using less water  and then like this grind rice using less water . Put both of them in a big bowl . Add salt and eating soda in to this . Mix well .

                       Batter should be thick so that if the spoon is dropped , it should not fall in to the form of a torch . Cover the bowl and keep it in a hot or warm place for fermentation . It takes 8 hours in summer , 12 – 14 hours in general weather and 20 -24 hours in winter for fermenent . It becomes just double after fermenent . So our idli dosa batter is ready . The mixture is ready to make idli or dosa . You can keep it in fridge for 4-5 days .

 

Note –

1 . Use basmati rice or idli rice for better results .

2 . Use split urad dal for the batter .

3 . Take big bowl for batter because after fermentation it becomes just double .

4 . Do not make batter more thin .

             Now this batter is ready to make idli or dosa . You can also make uttapam from this . Idli from this batter is more tastier than instant idli , made from idli mix . I suggest you to make more batter and keep it in fridge , from this you can make idli first day and second day you can make dosa or uttapam . I will write idli recipe in my next post .
